In February 2018 we produced two dark worts from Maris Otter, brown, oat and rye malts. One wort underwent a spontaneous fermentation in a fresh Red Bordeaux barrel, the other in one of our favourite and much used barrels, brimming with house culture. Twenty one months later the two were blended, bottled and held back for extended bottle maturation.
